Beets Beets Beets

I took Ben to Pike Place Market for the first time on Sunday. He was a little overwhelmed at first–do not go to the market on Sundays!!–but grew to like it, especially after we bought some veggies. We got a huge bag of produce: beets, green beans, asparagus, carrots, garlic, berries, and more for only $50! The bag was too heavy for me to carry…that’s what I call a good deal.

The next night, Ben cooked me a delicious meatloaf while I was at work. He also roasted some of our new veggies: carrots, green beans, red bell pepper, onion, and garlic. We ended up sharing the meal with almost all of our housemates, which was a lot of fun. There are a lot of frozen instant foods in our freezer, so I think everyone in the house has been yearning for a great home-cooked meal.

I was aching to test out the new veggies as well, so the next morning I roasted beets, Brussels sprouts, onion, and apple (why? who knows) in olive oil and white balsamic. It tasted very… interesting. The leftovers are still in the fridge, if that says anything. I did get my beet fix the next day when I tried out the new salad special at work. It’s a warm beet salad consisting of red and golden beets roasted in garlic olive oil and served with arugula and feta. Amazing! I think I need to start looking up some new veggie recipes and not just sticking with my old stand-by of chopping up everything I have and shoving it in the oven with olive oil until it’s soft. Good for brussels, but I need to branch out.

And I just received some great news! Ben and I just got approved for an apartment! It’s on First Hill, between Capitol Hill and downtown, a 20-minute walk to Pike Place Market, and a 10-minute walk to the library. It’s a half mile walk to a ton of cool things on Capitol Hill and has a public transit score of 100! We can go anywhere. Now time to start trolling free Craigslist for some furniture…
