Just Don’t Call Them Cookies!

This food blog is so much more intense than mine. She’s got recipes, and adaptations on recipes, and updates on recipes. She has an index. She’s even calculated nutritional information! When you can’t beat ’em, join ’em, they say, and since I couldn’t even begin to compete, I decided to try to make these peanut butter banana oat breakfast cookies.

These are… interesting. The craisins and chocolate chips are good, but the cookie “dough” made of oats, mashed banana, and applesauce leaves something to be desired. It’s kind of gelatinous. If I want cookies, I want flour, sugar, and butter, dammit! These cookies are gluten free, dairy free, egg free, sugar free…. yum free!

No, I’m exaggerating. They’re certainly edible, maybe even good, definitely healthy, and so easy to make. How about this compromise? They’re a sad replacement for a cookie, but a nice healthy snack. Deal?

Just don’t call them cookies!!

What you’ll need to make these healthy breakfast balls:

  • 2 ripe bananas, mashed
  • 1/3 cup peanut butter
  • 2/3 cup unsweetened applesauce (I used peach applesauce)
  • 2 tbs chia seeds
  • 1 tsp vanilla extract
  • 1 1/2 cups uncooked oatmeal
  • 1/4 cup chopped walnuts
  • 1/4 cup craisins
  • 1/4 cup chocolate chips

Preheat oven to 350 degrees. Mix mashed banana and peanut butter until completely combined. Mix in applesauce, chia seeds, and vanilla. Add the oatmeal, nuts, craisins, and chocolate chips. Let dough rest for 10 minutes.

On a lined cookie sheet, space out 1-inch balls of dough. Flatten balls into circles with the palm of your hand. These will not spread too much, so feel free to put the balls close together. Bake for between 20 and 30 minutes–variable I know, just keep checking! After a minute or two of being out of the oven, they should be cool enough to eat.

Please, I would love to hear everyone’s reactions to this recipe. Disgusting? Delicious? There are tons of different iterations on the website–peanut butter oatmeal raisin, blueberry almond banana oat, chocolate peanut butter–so maybe there is a perfect breakfast ball for everyone.
